Tex Mex is characterised by its heavy use of meat (particularly beef), beans, and a great variety of spices. Tortillas, nachos, crispy chalupas, chilli con queso, chilli con carne, and frajitas are all Tex Mex. Serving tortilla crisps and a hot sauce or salsa as an appetiser is also a Tex Mex combination. Tex Mex has imported flavours from other cuisines, such as cumin (common in Indian food). This blend is a mix of chilli powder, paprika, cayenne and other great ingredients. Create your own wonderful flavours for taco, chilli con carne, enchiladas, fajitas or tortillas!   Recipe Idea? Slice 4 turkey escalopes into 2cm strips, toss with a teaspoon or two of Tex Mex Spice and leave for the flavours to develop for an hour or more.   Stir fry in a little hot oil in small amounts for a few minutes until golden brown.   Serve in warm flour tortillas with shredded lettuce, guacamole and fresh chopped tomato!
